Salmon meat in combination with a crunchy and leafy salad, brown rice, and asparagus is simply breathtaking. But we have another secret ingredient for you. Orange juice and slices.

Ok, let’s get crackin’!

Ingredients

  • 5 (6 ounce) salmon fillets
  • 1 onion, sliced
  • 2 oranges, sliced any way you like
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon lemon pepper
  • 1 1/2 teaspoons garlic powder
  • 1 tablespoon dried parsley
  • 1/2 cup orange juice (pulp free)
  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon honey

Step By Step Preparation

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. In a small bowl, mix the lemon pepper, garlic powder, and dried parsley. Stir.
  3. In a baking dish, place half the orange slices in a single layer, then place a layer of onion slices over the orange. Drizzle with olive oil and half of the herb mixture.
  4. Place the baking dish in the preheated oven, and roast for about 25 minutes. Remove the dish from the oven, and increase the temperature to 450 degrees F (220 degrees C).
  5. Make room for salmon fillets by push the onion and orange slices to the outer edge of the baking dish. Place the fillets in the center and season with the remaining half of the herb mixture.
  6. Mix the orange juice, lemon juice and honey in a small bowl, then pour evenly over the salmon fillets.
  7. Bake for another 15 minutes. Once done, remove fillets to a serving dish, and discard the roasted orange, but garnish the fillets with fresh orange slices.

And Voila! The delicious and stunning salmon fillets are ready to be served. We recommend serving it with some fine white wine to enhance the whole event.

Bon appétit!
