Weekly Dose Of Healthy Recipes: Pomegranate & Aubergine Salad

No matter which diet you’re using or what type of main dish you’re having for lunch, a salad should always be a welcome guest on your table. In that name, here’s a pomegranate and aubergine salad recipe that will refresh your table and reinforce your health.


  • 1 tablespoon of pomegranate molasses
  • 450 g of aubergine
  • 1 bunch of fresh mint
  • 1 tablespoon of red wine vinegar
  • 1 clove of garlic
  • 9 tablespoons of Greek yoghurt
  • 1 handful of pomegranate seeds
  • 3 tablespoons of extra-virgin olive oil
  • Olive oil
  • Sea salt

Step-By-Step Preparation

  1. Slice the aubergine into rounds, then fry it with olive oil in a large pan on medium heat.
  2. Chop the mint leaves and peel the garlic. Use a pestle and mortar to crush them with a pinch of sea salt. Once they become smooth, add extra-virgin olive oil, molasses, and vinegar.
  3. Place aubergine slices on a plate and top them with yoghurt, dressing, and pomegranate seeds.
