For all you chicken meat and pasta lovers out there, here’s one quite simple but healthy recipe for chicken pasta – Greek style!

If you are looking to spice up your regular pasta or chicken dishes, you will definitely love this healthy pasta dish that incorporates some of the most savory flavors of Greece.

Kalamata olives, garlic, parsley and red onion really pack a nice spicy punch.

Let’s get down to business!

Ingredients

  • 1 (16 ounce) package linguine pasta
  • 1 pound skinless, boneless chicken breast meat – cut into bite-size pieces
  • 1 (14 ounce) can marinated artichoke hearts, drained and chopped
  • 1 large tomato, chopped
  • 1/2 cup chopped red onion
  • 1 tablespoon olive oil (kalamata if possible)
  • 2 cloves garlic, crushed
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano

Step By Step Preparation

  1. Bring a large pot of lightly salted water to a boil and cook your pasta of choice. Once the pasta is tender yet firm, take it out of the pot and let it drain.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Once the olive is heated, add onion and garlic and saute until fragrant (no more than 2 minutes).
  4. Stir in the chicken and cook for about 6 minutes. Stir occasionally.
  5. Once the chicken is no longer pink in the center and the juices run clear, reduce heat to medium-low and add artichoke hearts, tomato, feta cheese, parsley, lemon juice, oregano, and cooked pasta.
  6. Cook and stir the whole mix for another 3 minutes, then remove from heat.

And there you have it – the mouth-watering Greek Chicken Pasta is ready. Season with salt and pepper to taste, and garnish with lemon wedges for the whole experience.
