Weekly Dose of Healthy Recipes: Coconut And Prawn Curry

Valentine’s Day is approaching, which means it’s that time of the year to surprise our loved ones by treating them to a tasty home-cooked meal.

That’s why today we wanted to share this coconut and prawn curry recipe with our readers.

Aside from being delicious and having the exquisite combination of sweet and salty, this recipe is really easy to prepare and will only take you about 20 minutes to finish making this two-person meal.

Ingredients

  • 400 g of king prawns
  • 50 g of coconut cream
  • 1 large onion
  • 2 cloves of garlic
  • 2 red chilis
  • 2 lime leaves
  • 200 g of sugarsnap peas
  • 100g of peas
  • 100 ml of organic vegetable stock
  • 1 lime
  • Rice
  • Asian fish sauce
  • Groundnut oil
  • Lemongrass
  • Ginger

Step-By-Step Preparation

  1. Start off by peeling the onion and slicing the chilis. Do the same thing with ginger and garlic, while removing the outer layer of the lemongrass and chopping it up.
  2. Sauté chili, onion, garlic, ginger, lemongrass, and lime leaves in 2 teaspoons of heated oil for 5 minutes.
  3. Let the rice cook and add prawns, coconut cream, veggie stock and all other vegetables to the pan and cook for another 3 to 5 minutes.
  4. Remove the pan from the head and shower the mixture in fish sauce and lime juice, then serve on a bed of rice with additional lime wedges.
