Weekly Dose Of Healthy Recipes: Cauliflower-Onion Pasta

For all you linguine lovers out there, here’s one quite simple but healthy recipe for cauliflower and onion pasta meal that will surely tickle your taste buds.

This simple but original dinner recipe should take about 35 minutes (preparation – 25min, cooking – 10min), and the amount of ingredients will be enough for 4 servings.

  • Kosher salt
  • 12 ounces linguine
  • 2 cloves garlic, minced
  • 1/4 cup panko (Japanese breadcrumbs)
  • 1/2 cup fried onions, chopped
  • 4 cups cauliflower florets, roughly chopped
  • 1/2 to 1 teaspoon red pepper flakes
  • 1/4 cup grated parmesan cheese, plus more for topping
  • 2 tablespoons chopped fresh basil
  • 1/4 cup pine nuts

Step By Step Preparation

  1. Boil a large pot of salted water and add the pasta, cook as the label directs (reserve 1 cup cooking water), then drain the pasta
  2. Return to the pot and toss with 1 tablespoon olive oil
  3. Heat 2 tablespoons of olive oil in a large skillet over medium heat, then add the garlic and cook about 30 seconds. Add the panko along with the fried onions and cook. Make sure you stir for about 3 minutes until lightly toasted
  4. Heat the remaining 1 tablespoon of olive oil in the skillet over medium-high heat, and then add the cauliflower. Cook until the edges go brown (approximately 4 minutes). Add the red pepper flakes and toast for about 30 seconds, then add the reserved pasta water and cook until the liquid is reduced by half
  5. Add the pasta, onion mixture and parmesan to the skillet and toss
  6. Season with salt, basil, pine nuts and some more parmesan
