  • 1 cup chopped cauliflower
  • 2 eggs, beaten
  • 2 tbls of feta cheese, crumbled
  • 2 slices of bread, toasted
  • Olive oil

Step by Step Preparation

Coat a frying pan with olive oil and heat over medium heat. Add cauliflower and cook for 3-4 minutes. Mix feta cheese and eggs together and add mixture to the pan. Cook for another 3-4 minutes until the eggs are thoroughly cooked. Toast the bread and serve.
