Cooking healthy meals for your family is a wonderful contribution to their well-being as well as reinforcing healthy habits in your children that they will have as adults.

Today we present another healthy recipe that is a delight to make and the end product is bound to win you a bunch of “best-mom-ever” points.

Our buckwheat pasta with fresh veggies can be consumed as a light lunch, a snack in a smaller serving or as dinner.

Buckwheat means we avoid white-flour pasta and we make the sauce using fresh veggies and tomato purée.


  • 2 bags of buckwheat pasta
  • 1 leek, chopped
  • 2 cloves of garlic, chopped
  • 2 tomatoes, cubed
  • 1 red pepper, sliced
  • 5-6 cups of tomato purée
  • Salt and pepper
  • Basil
  • Olive oil

Step-By-Step Preparation

Cook the buckwheat pasta according to the instructions on the bag.

Preheat olive oil in a large pan and add leek and garlic. Once these are sautéed, add tomato, pepper and tomato purée. Cook for 15-20 minutes until the pepper and tomato are soft and juicy. Season to taste with salt and pepper and add basil for extra taste.

This recipe serves 4 and you can always add some bacon for good measure.
