Our Broccoli and Feta Omelet with Buckwheat Bread is a great breakfast idea that in reality can be made with any vegetable of your choice and any gluten-free, but most of all yeast-free bread to avoid bloating.

Our Broccoli and Feta Omelet with Buckwheat Bread recipe yields 1 serving and it takes 15 minutes to prepare.


  • ½ cup of chopped broccoli
  • 1-2 beaten eggs
  • 1 tbsp feta cheese
  • Olive oil
  • Pepper
  • 2 slices of homemade or store-bought buckwheat bread

Step By Step Preparation

Heat a pan over medium heat. Coat with olive oil, add chopped broccoli and cook for 3-4 minutes.

Whisk eggs, feta and pepper in a bowl and add to pan. Cook for 4-5 minutes until eggs are thoroughly cooked. Serve with 2 slices of buckwheat bread.
