Weekly Dose Of Healthy Recipes: Barbecue Portobello Quesadillas

Despite the hot days and the heat of the summer, a spicy, smoky dish is just what some of us need.

And what better way to quench your thirst for spiciness than with a delicious quesadilla?

This barbecue Portobello quesadilla recipe will take about 45 minutes to prepare, and with the ingredients below, you’ll be able to provide four people with a tasty and healthy meal.


  • 1 tablespoon of tomato paste
  • 1 tablespoon of cider vinegar
  • ½ cup of barbecue sauce
  • 1 diced onion
  • 4 whole-wheat tortillas
  • ¾ cup of shredded cheese
  • 2 tablespoon of canola oil
  • 1 pound of diced Portobello mushroom caps
  • ¼ tablespoon of ground chipotle pepper

Step By Step Preparation

  1. Put tomato paste, vinegar, barbecue sauce, and chipotle pepper into a bowl and stir.
  2. Heat 1 tablespoon of canola oil in a large skilled on medium heat, then add mushrooms. Stir occasionally for 5 minutes, then add the diced onion and cook until it becomes brown. Transfer the mixture into the barbecues sauce bowl and stir to combine.
  3. Spread 3 tablespoons of cheese on one half of each tortilla and pour ¼ of the sauce over it. Fold tortillas in half and press them gently to make them flat.
  4. Heat the rest of the canola oil in a pan, then add 2 quesadillas at a time and cook until they become golden on both sides. Repeat until all quesadillas are cooked, then cut them into wedges and serve.
