  • 4 ounces of linguine pasta
  • 2 chicken breast halves (skinless and boneless)
  • 2 teaspoons Cajun seasoning
  • Light sauce of your choice
  • 2 tablespoons butter
  • 1 red bell pepper (sliced)
  • 4 fresh mushrooms (sliced)
  • 1 green onion (chopped)
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon lemon pepper
  • 1/4 cup grated Parmesan cheese
  • Salt, black pepper and garlic powder to taste

Step By Step Preparation

  1. Cook pasta for 10 minutes in a large pot of lightly salted water. Drain the water and leave the cooked pasta for now.
  2. Coat chicken with the Cajun seasoning. In a large skillet over medium heat, sauté the chicken in butter for up to 7 minutes (or until near tender).
  3. Add the peppers, mushrooms, and green onion, and sauté and stir for a couple of minutes, then reduce the heat.
  4. Add the light cream, basil, lemon pepper, salt, garlic powder, and black pepper, then heat through.
  5. Finally, add the pasta (toss and heat through), then sprinkle with Parmesan cheese.
