The mesmerizingly delicious fruit salsa will give the baked salmon something you never imagined it needed – a spicy kick.

You’ll never have salmon the traditional way again after you tasted salmon with fruit salsa! Your mother-in-law and boss will never give you the stink-eye again.

The amount of ingredients in this recipe will be enough for 4 servings. The preparation will take about 15 minutes, while the cooking itself will take 40 minutes. Under an hour, you will be ready to amaze everyone at the table.

Ingredients

  • 1 pound of salmon steaks
  • 2 lemons (one sliced and one juiced)
  • 1 tablespoon of chopped fresh rosemary
  • 1/3 cup of water
  • ¼ cup of diced fresh pineapple
  • ¼ cup of minced onion
  • 3 cloves of minced garlic
  • 2 fresh, diced jalapeno peppers
  • 1 diced tomato
  • ½ cup of pineapple juice
  • ¼ cup of diced red bell pepper
  • ¼ cup of diced yellow bell pepper
  • salt and pepper to taste

Step By Step Preparation

The Salmon:

  1. Preheat the oven to 350°F / 175°C
  2. Take a shallow baking dish and coat it with the lemon juice
  3. Take the salmon steaks and arrange them in the dish
  4. Season the salmon with salt, pepper and rosemary
  5. Pour ¼ cup of water into the dish then put the dish in the oven.
  6. Bake for 35 minutes. Flake the meat with a fork to check whether it is baked enough.

The Salsa:

  1. Mix the pineapple, onion, garlic, jalapeno, tomato, pineapple juice, and yellow and red bell pepper in a medium-size bowl
  2. Cover the bowl and put it in the fridge while the salmon is being baked.

Finishing Touches:

  1. Take the salmon out of the baking dish and put it on an appropriate serving plate
  2. Take the salsa out of the fridge and cover the salmon with it.

To make an ever bigger taste explosion, serve the salmon and salsa over cooked white rice and serve it with some white wine. Bon appétit!
