Ok, it’s the end of January and with another holiday season behind us, it is time to make an effort to treat your body with some healthy meals and get back into shape.

For all you chicken meat lovers out there, here’s one quite simple but healthy recipe for baked chicken seasoned with garlic, parsley, basil and a tomato on top in order to sweeten up this delicious dish.

This simple but original dinner recipe should take about 50 minutes, while the amount of ingredients will be enough for 4 servings. After you’ve tasted this juicy Chicken with Garlic, Basil & Parsley, you’ll never want to go back to some heavier chicken recipes. Let’s get crackin’!

Ingredients

  • 1 tablespoon dried parsley, divided
  • 1 tablespoon dried basil, divided
  • 4 skinless, boneless chicken breast halves
  • 4 cloves garlic, thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tomatoes, sliced

Step By Step Preparation

  1. Preheat oven to 350 degrees F (175 degrees C)
  2. Coat a 9×13 inch baking dish with cooking spray
  3. Sprinkle 1 teaspoon parsley and 1 teaspoon basil evenly over the bottom of the baking dish
  4. Arrange chicken breast halves in the dish, and sprinkle evenly with garlic slices
  5. In a small bowl, mix the remaining 2 teaspoons parsley, remaining 2 teaspoons basil, salt, and red pepper. Sprinkle over the chicken
  6. Top with tomato slices
  7. Bake covered in a preheated oven for 25 minutes
  8. Remove cover, and continue baking another 15 minutes, or until the chicken juices run clear

And voila, the mouth watering garlic, basil and parsley chicken is ready! We recommend serving it with some fine white wine to enhance the whole event.
