Mushroom And Manchego Panini: The Easiest Deluxe Sandwich Ever

Who would have thought that a sandwich could be deluxe in taste while being incredibly easy to make? We certainly didn’t, but here we are, sharing with you this amazing mushroom and Manchego panini recipe!

This grilled, flavor-packed delight is perfect for those quick snacks, as it will refill your energy levels and fill you up for hours. It takes almost no time to make this delish and healthy sandwich, and almost no effort as well.

Ingredients

To make mushroom and Manchego panini you’ll need:

  • 1 teaspoon of unsalted butter
  • ¼ cup f minced shallots
  • 1 tablespoons of chopped fresh thyme
  • 2 teaspoons of minced fresh garlic
  • ½ teaspoon of freshly ground black pepper
  • ¼ teaspoon of kosher salt
  • 2 packages of presliced exotic mushroom blends
  • 1 package of presliced cremini mushrooms
  • 1 ½ tablespoons of sherry vinegar
  • 8 slices of sourdough bread
  • 3 ounces of shaved Manchego cheese
  • 1 halved garlic clove

Preparation

Take a large skillet, and melt the butter in it over medium-high heat. Add the shallots in the pan, along with thyme, garlic, pepper, salt, mushroom blend, and cremini mushrooms.

Cook this mixture for 10 minutes (or until the mushrooms are tender and the liquid almost evaporates), while stirring frequently.

Add the vinegar to the mix, and cook everything for 30 more seconds (again, until the liquid almost evaporates).

Divide the mixture evenly among four bread slices, and top each slice with Manchego cheese and the remaining bread slices.

Take a large grill pan, coat it with cooking spray, and heat it over medium-high heat before placing the sandwiches in it.

Place a cast-iron or another heavy skillet on top of the sandwiches and place them gently (this way you will flatten the sandwiches to give them that truly grilled look). Cook the sandwiches for 2 minutes on each side (while keeping the heavy item on top of them), or until the cheese has melted and the bread has toasted. Rub each side of the sandwich with the cut side of the garlic clove.
