Keep Warm with a Fast All-In-One Winter Broth

Keeping warm in the winter is a hard thing to do.

The cold seems to seep into nook and cranny in the house, making it hard to get comfortable in your own home. Not to mention that the cold tends to make people sluggish.

It can be hard to un-bundle yourself from your blankets on the couch to get up and spend time cooking something.

But fear not, for this healthy and hearty winter broth is just exactly what you need.

Ingredients

  • 2 x 400g/14oz cans chopped tomatoes
  • 2litres/3½ pints vegetable stock
  • 4 carrots, peeled and sliced
  • 2 x 420g/15oz cans mixed beans, drained and rinsed
  • 175g spinach
  • 1 tbsp roasted red pepper pesto

Directions

Pour the tomatoes and stock into a saucepan and bring it to a boil. Once boiling, turn down the heat and add the carrots. Simmer the soup for 15 minutes before adding in the beans and spinach. Continue to stir until the spinach begins to wilt, and then gently stir in the pesto.

Once the pesto is mixed, all you need to do is put it in a bowl and eat it. This dish goes great with some crusty bread as well. Enjoy staying warm this winter and happy eating!
