We at are already huge fans of lean chicken breast, but when you combine it with salsa, chopped onions and peppers, and sprinkled with a few nice spices – you get a mouth-watering yet weight-loss friendly meal perfect for these hot summer days.

The prep time for this recipe is only 10 minutes, however you will need to leave it to simmer quite a bit in the slow cooker until the chicken is tender and infused with Mexican flavor.

This Slow Cooker Chicken Fajitas recipe yields 6 servings with 2 fajitas each.

  • 1-1/2 pounds boneless, skinless chicken breasts (cut into 1-inch strips)
  • 1 cup salsa (of your own choice)
  • 1/2 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1 whole white onion (halved and sliced into strips)
  • 3 bell peppers (seeded, cored, and cut into strips)
  • 8 whole wheat tortillas
  • 6 tablespoons nonfat sour cream or Greek yogurt

Step By Step Preparation

In a large bowl, combine all the ingredients together. Make sure the chicken breasts are well coated. Pour the mix into your slow cooker and heat on low for 6 to 7 hours.

NOTE: If you are in a hurry, heat on high for 3 to 4 hours. Bottom line is – the chicken must be cooked through and the vegetables soft.

Serve on warmed tortillas, top with nonfat yogurt. You can also use nonfat sour cream. Enjoy!
