Mexican Quinoa

If you are in the mood for some full-on Mexican food, but you are also trying to lose some weight and thus looking to avoid the notorious heaviness of takeout food, you are in for a treat. Quite literally.

This easy-to-make recipe brings a truly Mexican meal to your doorstep without breaking a bank or a sweat.

As quinoa is packed with healthy nutrients and high in fiber and protein, this Mexican dish will do wonders for both your digestive system and your figure.

  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup sweet onion, diced
  • 2 cloves garlic, minced
  • 1 cup dry quinoa, rinsed well
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (4 ounce) can diced green chilies
  • 1 1/2 cups vegetable broth, low-sodium
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1/2 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup freshly chopped cilantro for garish

Step By Step Preparation

  1. In a large skillet, add oil and sauté onion until tender (it should take about 4 minutes).
  2. Add garlic and continue to sauté for 1 additional minute.
  3. Add all the remaining ingredients (except cilantro!) and stir to combine. Cover and bring to a boil.
  4. Cook for 15 minutes (or until liquid is absorbed and quinoa becomes tender). Turn off the heat, leave the cover on and let the skillet to set until any remaining liquid is absorbed, which shouldn’t take more than 10 minutes.
  5. Add cilantro for garnish.
  6. Serve and enjoy!
