This time we are focusing on the unique and delicious Mediterranean style as foods from this amazing region are packed with healthy fats, antioxidants, and other heart-healthy yet mouth-watering ingredients.

Our Mediterranean chicken recipe is rich in nutritious and tasty ingredients like kalamata olives and sun-dried tomatoes. Plus – it’s very easy to prepare!

Let’s get crackin’!


  • 4 boneless, skinless chicken breasts
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup pitted Kalamata olives (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 tablespoon parsley (chopped)
  • 2 scallions (chopped)
  • 2 tablespoons olive oil
  • Salt and fresh ground pepper to taste

Step By Step Preparation

Preheat your oven to 375 degrees F and season chicken breasts with salt and pepper.

Use a sharp paring knife to cut a slit in the side of each chicken breast to form a pocket (but don’t cut all the way through).

In a medium bowl, combine the feta cheese, dill, parsley, tomatoes, olives, scallions and 1 tablespoon olive oil. Stir well.

Stuff each chicken breast with the mix, but don’t overfill.

Heat your favorite large skillet over medium-high heat, add what’s left of the olive oil and sear each chicken breast until they are all browned.

Transfer them to a parchment lined baking sheet and bake for about 15 minutes (or until chicken is cooked through).
