Zucchini Soup

Finding a healthy weight loss meal plan that actually works can be a rather tricky task as different people have different needs and preferences.

We simply don’t all have similar metabolisms, which means some weight loss meals that work for your friend won’t necessarily work for you as well.

Here we have a recipe for delicious Herbed Zucchini Soup that will most certainly be beneficial for your weight loss plan.

And it is perfect for the upcoming summer.


  • 3 cups chicken broth (reduced-sodium if possible)
  • 1 1/2 pounds zucchini (cut into 1-inch pieces)
  • 1 tablespoon chopped fresh tarragon (or 1 teaspoon dried)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 3/4 cup shredded reduced-fat Cheddar cheese

Step By Step Preparation:

  1. In a medium-sized saucepan place broth, zucchini and tarragon. Bring to a boil over high heat, then reduce to a simmer and cook for up to 10 minutes, or until the zucchini is tender.
  2. Puree the zucchini in a blender. (See NOTE beneath)
  3. Once smooth, return the soup to the pan and heat over medium-high. Slowly stir in the reduced-fat Cheddar cheese.
  4. Remove from heat and season to taste.
  5. Serve immediately.

NOTE: To avoid splatter when blending the zucchini, remove the center piece of the lid, loosely cover the hole with a folded kitchen towel, then turn the blender on.
