Healthy Weight-Loss Recipes: Grilled Tilapia With Fruit Salsa

Yes, the list of ingredients for this meal might seem like a lengthy one, but don’t let that fool you. This is a rather easy-to-make (ready in 2 hours) and extremely healthy dish that will do wonders for both – your weight loss plan AND your taste buds!

Ingredients
- 1/3 cup extra-virgin olive oil
- 2 tablespoon lemon juice
- 1 tablespoon minced fresh parsley
- 1 clove garlic (minced)
- 1 teaspoon dried basil
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 2 (6 ounce) tilapia fillets
- 1 large ripe mango (peeled, pitted and diced) + other fruit to taste
- 1/2 red bell pepper (diced)
- 2 tablespoons red onion (minced)
- 1 tablespoon fresh cilantro (chopped)
- 2 tablespoons lime juice
Step By Step Preparation
- Mix together following ingredients: extra-virgin olive oil, 1 tablespoon lemon juice, parsley, garlic, basil, 1 teaspoon pepper, and 1/2 teaspoon salt. Once combined, pour into a re-sealable plastic bag.
- To marinate the fillets, put them into the bag, coat with the marinade, squeeze out excess air, and seal the bag. Refrigerate for 1 hour.
- Prepare the fruit salsa by combining the following ingredients: mango (and other fruit), red bell pepper, red onion, cilantro, lime juice and 1 tablespoon of lemon juice. Toss well. Season to taste and refrigerate until serving.
- Preheat your grill for medium-high heat, and oil the grate lightly.
- Remove the tilapia fillets from the marinade and gill them until the fish meat flakes easily with a fork (approximately 3 to 4 minutes per side).
- Serve the tilapia topped with fruit salsa.
