Healthy & Easy Breakfast – Broccoli And Feta Omelet

  • Cooking spray
  • 1 cup chopped broccoli
  • 2 large eggs, beaten
  • 2 tablespoons feta cheese, crumbled
  • 1/4 teaspoon dried dill
  • 2 slices rye bread, toasted


  1. Heat a skillet (a nonstick one if possible) over medium heat, than coat the pan with cooking spray.
  2. Add broccoli, and cook 3 minutes. During this time, combine eggs, feta, and dill in a small bowl.
  3. After the broccoli is all nice and juicy, add the egg mixture to pan and cook for another 4 minutes.
    Flip the omelet and cook for another 2 minutes. Serve with nice, crispy toast.
