Christmas is upon us and that means only one thing: we need to concentrate on healthier recipes in order to balance out the heavy holiday diet.

“No bake” foods, especially deserts, are always a good idea, even if you are not vegan, which is exactly why we decided to give you our favorite no bake dessert recipe – delicious No Bake Coconut Cookies.


  • 1/2 cup coconut sugar
  • 2 Tbsp unsweetened almond milk
  • 3 Tbsp coconut oil (or sub vegan butter)
  • 2 Tbsp unsweetened cocoa powder or cacao powder
  • 1/2 cup unsweetened shredded coconut
  • 1 cup rolled oats
  • 1/3 cup salted natural peanut butter, crunchy or creamy
  • 1/2 tsp pure vanilla extract
  • pinch sea salt

Step-By-Step Preparation

  1. Add coconut sugar, almond milk, cocoa powder and coconut oil to a saucepan. Bring to a low boil over medium heat. Stir frequently.
  2. Once it starts to bubble, let the mix boil for 1 minute. Remove from heat and add peanut butter, oats, shredded coconut, vanilla and salt. Stir until combined.
  3. Drop tablespoon amounts of the batter onto the prepared baking sheet.
  4. Let sit at room temperature for about 30 minutes (or until cooled and hardened).
  5. Optional: sprinkle with additional flaked coconut.
