Weekly Dose Of Healthy Recipes: Lightweight Asian Chicken Salad

Ok, summer is pretty much here which means it is time to make a little bit of effort to treat your body with some healthy and light meals suitable for these high temperatures.

For all you chicken salad lovers out there, here’s one quite simple but healthy recipe originating from Asia.

It should not take you more than 20 minutes to prepare, but this healthy, vibrant but low-calorie dish will make you forget all the other, much heavier chicken recipes. Well, at least until the end of this hot summer.

Ingredients

  • 1 small roasted chicken (1kg)
  • 1/2 red cabbage (cored and finely sliced)
  • 3 carrots (finely shredded)
  • 5 spring onions (finely sliced)
  • 2 red chillies (halved and thinly sliced)
  • small bunch coriander with stalks (roughly chopped)
  • 2 heaped tbsp roasted salted peanuts (roughly crushed)
  • 3 and a half tbsp hoisin sauce (for the dressing)
  • 1 and a half tbsp toasted sesame oil (for the dressing)

Step By Step Preparation

  1. Combine the dressing ingredients in a small bowl and set aside
  2. Remove all the meat from the chicken and shred into chunks
  3. Put the chicken chunks into a large bowl
  4. Add the cabbage, carrots, spring onions, chillies and half the coriander
  5. Toss together with the dressing and pile onto a serving plate
  6. Then scatter over the remaining coriander and peanuts
  7. Season to taste

And there you have it, a delicious low-calorie chicken salad is ready. We recommend serving it with some fine white wine to enhance the whole event.
