Vegetarian Treat: Perfectly Grilled Tofu With Szechuan Vegetables

Most people don’t know the trick to a perfect and meaty-textured tofu. Let’s change that!

The secret to a meaty tofu is to: freeze it until solid, let it thaw in the fridge, press the water out, and only then grill it or cook like you would regular meat.

For this special vegetarian recipe we will be making tofu that is marinated, grilled, and served with Szechuan vegetables for an easy yet delicious meatless recipe.

Ingredients

Tofu:

  • 1 pound firm tofu (frozen and thawed, like we said)
  • 3 tablespoons lite soy sauce
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons apple cider vinegar
  • 1 clove garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1/4 teaspoon red pepper flakes

Szechuan Vegetables:

  • 1 tablespoon toasted sesame oil
  • 1 pound fresh green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 3 cherry tomatoes
  • 1 teaspoon lite soy sauce
  • 2 tablespoons Szechuan sauce
  • 1 teaspoon corn starch

Step By Step Preparation

Tofu:

  1. Cut the thawed tofu into 1/2 inch thick square slices. In a small bowl, combine the marinade ingredients.
  2. In a shallow baking dish, lay the tofu pieces and pour the marinade on each piece. Refrigerate for 30 minutes (you can marinade up to 24 hours for more taste).
  3. Preheat your grill to medium-high heat and grill the tofu pieces for up to 6 minutes per each side (or until firm and there are nice grill marks on both sides).

Vegetables:

  1. Pour water in a medium sized pot and bring to a boil. Add the green beans, blanche for 2 minutes and then drain and rinse with ice cold water.
  2. In a small bowl combine the corn starch with a teaspoon of cold water.
  3. Heat a large skillet over medium-high heat and add: sesame oil, green beans, red peppers, tomatoes and onions. Add the soy sauce and Szechuan sauce, stir quickly for about 1 minute. Add the corn starch mixture and stir until thickened.

Serve and enjoy!

NOTE: We recommend a bottle of fine white wine with this delicious grilled tofu!
