Chicken Meatballs

If you simply love spicy, street-tacos-like food, but are also trying to lose some weight, this easy and healthy yet delicious recipe is definitely for you.

The secret here lies in Korean Red Pepper powder (or flakes). This spicy bright red powder is traditionally made for the preparation of kimchi, as it brings a mildly spicy punch and incredible bright-red flavor to any dish you add it to.

This is why it is perfect for our spicy chicken meatballs, especially in synergy with glazed honey.

Let’s get busy!

Ingredients

  • 1 pound (lean) ground chicken
  • 1 egg
  • 1/2 cup whole-wheat bread crumbs or almond flour
  • 1 tablespoon Red Pepper powder or flakes, (Korean or Asian recommended)
  • 1/2 cup green onions, finely diced
  • 2 teaspoons garlic powder
  • 2 teaspoons fresh or powdered ginger
  • 3/4 teaspoon kosher salt
  • 3 tablespoons honey
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons tamari or low-sodium soy sauce
  • 1 tablespoon sesame seeds
  • 2 tablespoons fresh cilantro, chopped

Step By Step Preparation

  1. Preheat oven to 350 degrees.
  2. Bring out your largest bowl and use it to mix together the following ingredients: ground chicken, egg, bread crumbs, red pepper flakes, green onions, garlic powder, ginger, and salt.
  3. Set aside your mix for up to 15 minutes so the breadcrumbs will have enough time to expand. Then roll it into 1-inch balls.
  4. Place them on a parchment-lined baking sheet and bake for up to 22 minutes (or just until the center of each meatball is cooked), then transfer meatballs to a large skillet.
  5. In a small bowl, mix together: honey, vinegar, and tamari; and drizzle the mix over meatballs.
  6. Cover the skillet and turn stove to medium heat. Stir every 2-3 minutes so the meatballs don’t stick to the bottom of the pan.
  7. Cook until the mixture begins to steam, then remove from heat, sprinkle with sesame seeds and cilantro.
  8. Serve your awesome spicy chicken meatballs immediately to your friends and enjoy!
