If you are like us and you simply love anything that involves curry, this easy-to-make slow cooker beef curry recipe will definitely tickle your taste buds.

There’s no prep work required for this meal, simply toss all the ingredients in the slow cooker and your healthy yet mouth-watering weight-loss-friendly dinner will be ready in about 7 hours.

This recipe serves 4 and provides 176 calories per serving.

Ingredients

  • 1 pound lean stew meat (cut into bite-size pieces)
  • 2 teaspoons curry powder
  • 1 small sweet onion (diced)
  • 2 cloves garlic (minced)
  • 2 teaspoons freshly grated ginger
  • 1/2 teaspoon black pepper
  • Kosher or sea salt to taste
  • 1/2 cup freshly chopped cilantro
  • 1 3/4 cups beef broth or stock, low-sodium
  • 1 tablespoon cornstarch

Step By Step Preparation:

  1. Place all the lean stew meat in slow cooker.
  2. Sprinkle with curry powder and add all other ingredients. Stir well.
  3. Cover and cook on low 7 to 8 hours.

This slow cooker beef curry meal is best served over a bed of brown rice, quinoa or couscous. However, if you are on low carb diet, we recommend eating this delicious dish for lunch instead of dinner.

NOTE: If you want a thicker curry, combine starch and water, add to slow cooker the last 15 minutes of cooking time.
