This recipe combines the textures of chewy wild rice and soft and meaty mushrooms, so you won’t be missing the meat ingredient.

Another great thing about this easy-to-prepare hearty side dish is that you can keep it in your fridge for several days and use it later for future meals.

Ingredients

  • 2 cups wild rice blend
  • 1 Tbsp olive oil
  • 4 cups vegetable broth
  • ¾ cup shallots, finely chopped
  • 2 cups sliced mushrooms
  • 1 clove garlic, minced
  • 1 Tbsp fresh rosemary
  • 1 Tbsp fresh sage
  • 1 tsp fresh thyme

Step By Step Preparation

  1. Take your wild rice blend, pour in the olive oil and stir until well coated.
  2. Add the vegetable broth shallots, mushrooms, garlic, and herbs. Stir until well combined.
  3. Cook slowly on low setting for up to 5 hours.
  4. Once the rice is tender, sprinkle with additional fresh seasoning before serving.
