Herbed Broccoli Salmon

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper
  • 1 lemon
  • 4 6-ounce salmon filets
  • 1 1/2 cups vegetable stock
  • 1 cup bulgur wheat
  • 1/2 cup broccoli florets (chopped)
  • 10 cherry tomatoes (sliced in half)
  • Goat cheese

Step By Step Preparation

  1. Preheat oven to 400 degrees F.
  2. In a small or medium bowl combine: olive oil, Italian seasoning, salt, pepper, and lemon juice. Stir.
  3. Use the mix to coat the salmon filets, then lay them on a parchment lined baking sheet and roast for about 12 to 15 minutes (or until cooked through).
  4. In the meantime, bring vegetable stock to a boil, salt to taste, and add broccoli and bulgur. Cover, turn off the heat and let it sit until liquid is absorbed. Approximately 10 minutes.
  5. Finally, top the bulgur with the salmon filets and garnish with cherry tomato halves and goat cheese.
