Healthy Weight Loss Recipes: Chicken Noodle Soup To Get You Through The Work Week

When you are looking to lose some weight, lunchtime is really important. With this super-simple chicken soup dish that incorporates rotisserie chicken and whole wheat noodles, you will get a delicious meal that will help you shed those pounds quickly.

Our chicken noodle soup is low in fat, low in sodium, and has less than 175 calories per serving – a perfect combo!

This recipe yields up to 10 servings, plus it only takes 30 minutes to make from start to finish! Let’s get busy!

Ingredients

  • 1 tablespoon olive oil
  • 2 medium carrots (chopped)
  • 3 medium celery stalks (trimmed and diced)
  • 1 medium white onion (diced)
  • 4 cups high quality and organic chicken stock that is low on sodium
  • 1 teaspoon black pepper
  • 2 garlic cloves (crushed)
  • 1 teaspoon dill weed
  • 1 rotisserie chicken
  • 1 cup whole wheat egg noodles
  • 3 tablespoons fresh parsley (minced)

Step By Step Preparation

In a large pot, heat the olive oil over medium high heat. Add the mirepoix and saute until the onion becomes soft (typically about 4 minutes).

Disassemble the chicken by removing the skin (reserve half of the skin) and pulling as much meat off of the bones as possible. Set aside.

Once the onion is soft, add the organic chicken stock, black pepper, garlic and dill weed. Simmer over medium heat for 5-6 minutes more.

Add half the chicken skin, 1 cup of chicken meat and the noodles, and simmer for another 10 minutes (or until a light foam forms). Skim this foam with a spoon, remove the skin and throw it away.

Add salt or additional pepper to taste.

Stir in the minced parsley.

OPTIONAL: Serve hot with crackers.
