Ingredients

Salad:

  • 1 cup baby spinach (large spinach leaves also acceptable)
  • 1/2 avocado (chopped)
  • 1/3 red onion (sliced)
  • 1/2 cucumber (sliced)
  • 1 carrot (grated)
  • 8 almonds (sliced)
  • 1 cup beans sprouts
  • 1/2 cup fresh parsley
  • 1 tomato (diced)
  • 1 cup roasted chicken breast (chopped)

Dressing:

  • 1 lemon (squeezed)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • Season to taste

Step By Step Preparation

  1. In a large bowl, add all the salad ingredients and toss to combine.
  2. In a small bowl, whisk together all the dressing ingredients.
  3. Drizzle the dressing over salad.
  4. Enjoy!
