A Perfect Spring Salad Experience

Spring is here and it’s time for light, colorful, and easy foods.

Aside from the barbeques everyone likes to prepare when it’s sunny outside, salads are our usual choice when we want to get refreshed and to consume our daily share of vegetables.

With that in mind, here is a recipe that combines meat and veggies into a spicy salad that will certainly become one of your favorite dishes.

Thai Beef Salad

Coming straight from the Thai cuisine, this salad is packed with various vegetables, spices, and beef. It will take you about 30 minutes to prepare and 3 hours to chill 4-6 servings, but once you’ve tried it, you’ll see that it was worth the wait.

Ingredients

  • 2 green onions
  • 1 lemon grass
  • 1 cup of chopped cilantro
  • 1 cup of chopped mint leaves
  • 1 cup of lime juice
  • 1/3 cup of fish sauce
  • 1 tablespoon of sweet chili sauce
  • ½ cup of sugar
  • 2 pounds of beef steak
  • 1 head of lettuce
  • 1 cucumber
  • 1 handful of cherry tomatoes

Preparation

  1. Put onions, lemon grass, cilantro, mint leaves, lime juice, fish sauce, chili sauce, and sugar in a large bowl and stir until the sugar dissolves.
  2. Cook the steak on a preheated grill for 5 minutes on each side. When the stake is medium cooked, slice it into thin strips and mix it with the sauce. Leave the mixture in the fridge for 3 hours.
  3. While waiting for the steak to cool off, tear the lettuce and cut the cucumber. Once your meat is ready, place lettuce, cucumber, meat, sauce, and cherry tomatoes in a salad bowl in that order.

Note: Thai cuisine usually involves spices in its recipes, but if you’re not a fan of spicy food, you can remove the chili sauce from this recipe.
